If you use server side processing then only the page being displayed resides at the client. See the Processing modes docs for more details. The "Loading..." message is an actual table row that is added during initialisation, whereas the "Processing..." message is an overlay. When you press a button, this function is called and returns the current page content. You can overwrite that function so it pulls all server side results based on current filters.
